KNOW THY CYCLE

PHASE 1: FOLLICULAR PHASE

DURATION: 7-10 DAYS

  • Hormone focus. The hypothalamus signals your pituitary gland to send follicle stimulating hormones to your ovaries, telling them to get ready to release another egg.  Several egg follicles start to swell in preparation.  Estrogen increases to thicken your uterine lining so that it can host an egg.

• Body focus. Physical energy increases throughout this phase, and you may sometimes feel restless.

• Lifestyle focus. Creativity and new beginnings characterize this phase. This is the time to direct your energy into stimulating projects at work and at home. Plan brainstorming sessions with your coworkers; save your most mentally challenging assignments for this week since your brain's penchant for creativity at this time makes it easier to problem-solve. Your physical energy is at one of its highest points during your follicular phase. Emotionally, you feel outgoing, upbeat, and revitalized.

• Exercise focus. Try something new-take that Zumba or yoga sculpting class you've been yearning to try at your gym. Putting your brain and body in a new, stimulating situation feels like an easy, natural thing for you to do at this time of the month.

Making Kombucha

Ingredients:
  • 1 Scoby
  • 8 Black Tea Bags
  • 1 Cup Pure Sugar
  • Distilled Water
Directions:
1. Reserve two cups of original kombucha and Scoby to add to a clean gallon jar.
2. Boil two to three cups of water, add one cup of pure sugar, and stir until dissolved. Then steep 8 black tea bags (or 2 family size tea bags).  Do not use Early Grey tea!  
Let cool to room temperature.
3. Pour sweet tea into the gallon jar. Top with distilled water, a coffee filter and rubber band. Label with the date.  Let sit for 10-14 days to complete the ferment.
4. Pour into airtight bottles. Sit in cabinet 1-2 days for extra fizz.
5. Store containers in the refrigerator.
   

Notes 
  • My pickiest eater loved Kombucha so much we did second ferments using whole fruit or puree/ juices.  The flavors are endless.
  • We used mandarin oranges added to the kombucha and refrigerated for 2 days.
  • Next up dried Ningxia wolfberries added to another bottle of booch and refrigerated for 2 days.  
  • Our favorite was adding grape juice to our booch and again refrigerate for 2 days and try the brews!
  • Do NOT substitute Honey for the sugar in the recipe!
  • Make sure your water is free of chlorine and other harmful chemicals.

Did you know gluten hides in many store bought soups?
Gluten is often found in these soup ingredients:
 Noodles
 Barley
 Thickeners
 Seasonings
 
 Making your own soups is an easy way to control the ingredients not to mention when it's made with love it  tastes even better!
Ingredients:
  •   Quart of Gluten Free Broth (I chose unsalted to control sodium)
  •   Small Chopped Onion
  •   Large White or Sweet Potato Chopped
  •   2 Ribs of Celery Chopped
  •   1 Can Kidney Beans
  •   2 Carrots, Skin Removed and Chopped
  •   2 TBL Dried Oregano
  •   1 TBL Dried Italian Seasoning
  •   2 Garlic Cloves Minced
  •   Pepper to Taste
  •   Salt to Taste
 Instructions:
1. Short on time? Place chopped vegetables in the microwave for 2 minutes to soften.
 OR add olive oil to pan and saute chopped vegetables until soft.
 
 2. Combine veggies, spices, broth into a stock pot. Bring to a boil then simmer 15 minutes to meld flavors.
 
 3. Add salt and pepper to Taste.

Rotisserie Pork Loin & Sweet Potatoes

Need a dinner idea? Rotisserie Pork Loin with Sweet Potatoes your way! 
 
 
Ingredients:
 Instructions:
1. Sprinkle Pork Loin with Onion Soup Mix
2. Put Tenderloin on the Rotisserie Spit and turn on.
3. Cook loin 30 minutes to 1 hour depending on the size of loin or until internal temperature reaches 145'.  This seems to result in the juiciest pork full of flavor.
4. Remove loin from spit and let rest 15 minutes before carving into 1/2 inch pieces.
Sweet Potatoes Your Way
Ingredients:
  • 2 pounds of  Sweet Potatoes
  • 1 Pint of Water
 Instructions:
1. Wash Sweet Potatoes This is the Veggie Soak I use
2. Put sweet potatoes in the Instant Pot


3. Add water.
4. Set Instant Pot to manual for  7 minutes.
5. Let potatoes natural release for 15 minutes.
6. Remove skins.

Eggless Sweet Potato Souffle
 
Ingredients:
  • 1 1/2 pounds of sweet potatoes
  • 1/4 Cup Almond Milk 
  • 1 TBL Brown Sugar
  • Marshmallows
Instructions:
1. Whip Sweet Potatoes with brown sugar and almond milk
2. Top with mini marshmallows
3. Bake 350' for 15 minutes to melt marshmallows


Sweet Potato Hash
Ingredients:
  • 1/2 pounds of  sweet potatoes
  • 1/4 Cup  Sliced Onion
  • Chopped fresh cilantro for garnish
  • Olive Oil
  • Salt & Pepper to taste
Instructions:
1. Heat olive oil in fry pan.
2. Cut Sweet Potatoes into chunks
3. Saute onion and Sweet Potatoes until onions caramelized
4. Finish with chopped cilantro (optional)
