Gluten Free Sugar Cookie Fruit Pizza
Dessert pizza with a gluten free crust topped with whipped topping and fresh fruit.  This dessert is simple to make and beautiful to serve to guests they will never know it is gluten and dairy free!

Ingredients
  • 1 1/4 Cup of gluten free flour
  • ½ tsp baking soda
  • ½ cup Earth Balance Soy Free Buttery Spread or other dairy free butter softened 
  • 1 farm fresh egg
  • ¾ cup cane sugar
  • So Delicious Cocowhip
  • Fresh berries
Instructions
  • Preheat oven to 350'
  • Add all ingredients in a bowl mix until well combined.  
  • Transfer to a parchment lineed 2 quart rectangle baking dish.
  • Press out with fingertips to even thickness.
  • Bake cookie crust about 15 to 18 minutes or until lightly golden.
  • Remove from oven and cool completely.
  • Thaw So Delicious Cocowhip and spread over cookie crust.
  • Wash and slice fresh berries and layer over the cocowhip
  • Garnish with fresh mint.

Notes from the Cook
  • Use any fresh seasonal fruit you like the possibilities are endless.
  • Do not over cook the crust or it will be dry.
