Easy gluten-free blackberry cobbler
Satisfy your sweet tooth without gluten with this delicious and easy-to-make gluten-free blackberry cobbler. Made with fresh blackberries and a simple gluten-free crust, this cobbler is the perfect way to enjoy all the flavors of summer in a healthy and gluten-free dessert.

This Gluten Free Blackberry cobber only takes 7 ingredients and 10 minutes to make.  Perfect to take to your next picnic or brunch, since it doesn't need refrigeration the first two days.

Ingredients
  • 1/4 cup melted coconut oil for 9x13 baking dish
Ingredients for Filling
  • 5 1/2 cups of blackberries fresh or frozen (if frozen add gluten free flour below)
  • 3/4 cup of cane sugar
  • 1/4 cup of gluten free flour (if using frozen berries)  Do Not let berries sit too long they will draw too much juice making cobbler wet.
Ingredients for Batter
  • 1 cup gluten free flour
  • 2 tsp baking powder
  • 3/4 cup of dairy free milk
  • 3/4 cup of cane sugar
  • 2 tsp aluminum free baking powder
Directions
1. Wash berries  in fruit and veggie wash.  My favorite wash 
2. In 9x13 baking dish add coconut oil and place in oven let melt while heating up
3.  Preheat oven to 350'
4.  In a bowl combine berries, 3/4 cup sugar (if using frozen berries add 1./4 cup of gluten free flour)
5.  In another bowl mix batter by combining 1 cup gluten free flour, 2/4 cup sugar, baking powder, milk
6. Pour batter into baking dish with melted coconut oil
7.  Place berries ontop of the batter
8.  Bake 35-40 minutes.  Allow to cool or serve warm with cocowhip or cashew ice cream.


Notes
Substitute blackberries for another fruit combo above.
Dairy milk can be substituted for dairy-free milk
