- 1½ lbs organic white potatoes
- ½ TBSP coarse pink himalayan salt
- 1 cup water

Scrub potatoes and rinse. Cut potatoes into about 1 inch pieces. Add potatoes, salt, and water to Instant Pot. Pressure cook (Manual) for 2 minutes. Allow natural pressure release before opening.

- 1 TBSP extra virgin olive oil
- 2 TBSP fresh lemon juice
- 2 drops Lemon Vitality oil
- 1 garlic clove
- 1½ tsp sugar
- 1 tsp yellow mustard or brown spicy mustard if you like a little kick
- 8 tsp black pepper
- 2 basil cubes preserved in olive oil, thawed
- 2–3 green onions, finely sliced

Combine olive oil and lemon oil first to distribute flavor. Add remaining ingredients except green onions. Using a hand held blender blend until smooth and basil is as finely chopped as you like. Pour dressing over hot potatoes and toss gently. Serve hot or cold your choice!
Notes & Tips
- No Basil Cubes: Substitue two tablespoons of fresh basil plus two tablespoons of olive oil.
- Preserving citrus: Wash citrus in Thieves Fruit and Veggie Wash then rinse with water. Juice citrus and add it to ice cube trays. Freeze. Pull out just what you need.
- Preserving Basil: Wash and dry gently to prevent browning on leaves. Dry completely and do a quick chop. Pack into ice cube trays, cover with olive oil and freeze.
- Storing frozen cubes of herbs: Once frozen remove from ice cube tray and place in a glass mason jar, you can use a layer of parchment paper between cube layers to avoid occasional sticking together.
- Make ahead: Then reheat or serve it cold at your next picnic.
