Ingredients
- 1/2 C Butter
- 1 C Sugar
- 8 drops of Peppermint Vitality Oil
- 2 Large eggs
- 1 C plus 1 TBL Jenn’s 1:1 Gluten-Free All-Purpose Flour Blend or your favorite blend
- 1/2 C plus 1 TBL Cocoa Powder
- 1/4tsp guar gum (omit if your flour has gum added)
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/3 C of powdered sugar to roll cookies

- Preheat & Prep
Preheat your oven to 350°F and line a baking sheet with unbleached parchment paper. - Cream the Base
In a large mixing bowl, cream together the softened butter, sugar, and peppermint oil. This step helps evenly distribute that fresh mint flavor throughout every bite. - Add the Eggs
Crack in the eggs and mix until smooth and fully combined. - Mix the Dry Ingredients
Add in the gluten-free flour blend, cocoa powder, salt, and baking soda. Mix until a soft, rich dough forms. - Prepare for Rolling
Place the powdered sugar in a small bowl for rolling. - Scoop & Roll

- Make your own Powdered Sugar: Blend 1 tablespoon or tapioca, arrowroot powder, or cornstarch with 1 cup of cane sugar in the Nutri-Bullet in seconds. you will have powdered sugar!
- Make your own Baking Powder: 1 tsp cream of tarter + 1/4 tsp baking soda + 1/4 tsp of your choice of ONE (tapioca starch/flour or arrowroot or cornstarch)= 1 1/2 tsp baking powder store in a spice jar shake before each use.
- Bake ahead: Store in the freezer in an airtight container. Warning they taste even better frozen!
- Storage: Store in an airtight container 3-5 days at room temp. I have never had it last that long!
