Best apple bean blondies
Indulge in a delicious and healthy dessert with these apple bean blondies. Made with mashed beans, fresh apples, and other wholesome ingredients, these soft and chewy blondies are a tasty and guilt-free treat.

A fall twist on blondies with apples, cinnamon, and clove.  Whip these up in the food processor in minutes.  Enjoy for breakfast, brunch, or dessert! 


With apple season in full swing, you will find many delicious varieties to choose from at local farmers' markets and U-pick orchards.  In this recipe, I used Granny Smith apples 

Cannellini Beans are nourishing with plant-based protein, fiber, folate, magnesium, iron, and more.  Unseasoned beans are naturally gluten-free too!

Not a fan of beans no problem!  The beans are so mild you won't taste them at all or detect their texture. The secret is making this recipe in a food processor.

Ingredients
  • 1 Can of Cannellini Beans rinsed and drained
  • 3 tbsp of Extra Virgin Olive Oil + 1/2 tsp reserved to combine with vitality essential oils
  • 1/2 tsp Baking Soda
  • 1 tsp of Gluten Free Baking Powder
  • 1/2 Cup Packed Light Brown Sugar
  • 2 Apples peeled and cored
  • 1 Cup Gluten Free Flour Blend
  • 3 Drops of Nutmeg, 2 Cinnamon, and 1 Clove vitality Essential Oils
  • Cinnamon to sprinkle over the apples just before baking
Directions
Preheat oven to 350'
  • Cut parchment paper to fit a 9 inch pie pan. Folding the square into quarters and rounding the edges.
  • In a food processor add beans, 3 tbsp of oil, 1 apple, and brown sugar.  Pulse a few times.
  • Add baking powder, baking soda, and gluten free flour and pulse again.
  • Take the 1/2 tsp of oil reserved and drop cinnamon, nutmeg and clove vitality oils onto it.  Then add to batter and pulse again.
  • Finely slice the second apple.
  • Arrange the apple around the pie plate and sprinkle with cinnamon.
  • Bake in oven for 25 minutes or until the toothpick comes out clean.
  • Cool on a baking rack until room tempature.
  • Slice and enjoy!  Store in the refrigerator.
Notes
If you don't have 1 tsp baking powder substitute with 1/4 tsp baking soda + 1/2 tsp cream of tarter in this recipe.  I stopped buying baking powder years ago!
