Broccoli & Bacon Salad
Try this crunchy and flavorful broccoli and bacon salad for a quick and easy side dish or light lunch. With crisp bacon, tender broccoli, and a tangy dressing, you'll love this healthy and delicious salad.
Ingredients
- 2 Large Heads of Broccoli
- 3/4 Cup Turkey Bacon chopped into small pieces or chopped ham (gluten-free)
- 1/3 Cup Pumpkin Seed Kernels or Sunflower Kernels
- 3/4 Cup Helman's Mayo
- 1 tbsp minced onion
- 1/3 Cup Apple Cider Vinegar
- 1 1/2 tsp Honey
- Salt & Pepper to taste
- Optional 1/3 Cup Chopped Cashews
- Optional 3/4 Cup dried Ningxia Wolfberries or Sliced Grapes
Directions
1. Cut broccoli into small florets and place in a medium bowl (yields 5-6 cups)
2. In small bowl whisk together mayo, apple cider vinegar, honey and salt and pepper to make the dressing.
3. Pour the dressing over the broccoli florets in the medium bowl.
4. Add the onion, bacon, sunflower kernels, chopped cashes and Ningxia Wolfberries to the medium bowl.
5. Stir until combined.
6. Refrigerate until ready to serve.
Notes
Want to switch things up? Try these variations
- (2) 12 oz bags of Broccoli slaw to substitute broccoli florets
- Substite pecans for cashews
- Substitute Ningxia Wolfberries for cranberries, sliced grapes or apples (dip apples in lemon juice to prevent browning)
- White vinegar will work instead of apple cider vinegar
