Gluten & Dairy Free Crepes
Figs and apples are in season now and make a delicious filling for these easy gluten and dairy free crepes. Enjoy them for breakfast, lunch, dinner or dessert. From sweet to savory and everything in between. The fillings are endless.
Ingredients
- 3 Eggs
- 1 Cup of Gluten Free (GF) Flour or make my GF Oat Flour
- 1 Cup of Dairy Free (DF) Milk
- 1 TBL Extra Virgin Olive Oil (EVOO) to grease the pan
Directions
- Whip eggs in a bowl until bubbly.
- Add dairy free milk and GF flour.
- Whip another 1-2 minutes.
- Grease skillet with extra virgin olive oil.
- Pour 3 TBL of Gluten Free batter in pan and swirl batter while moving skillet.
- Cook about 30-45 seconds.
- Flip to other side carefully. Cook another 30 seconds. Slide onto a plate.
- Cover with a towel.
Tips to Making Great Crepes
1. Use a non-stick skillet and oil pan before adding batter each time.
2. Even medium heat. Too high and he batter won't spread well in the pan.
3. Don't flip too early.
4. Fillings can be simple or fancy as a crepe cake .
