Watermelon lime fruit salad

Ingredients
- 6 cups watermelon cubed
- 3 cups sliced strawberries hulled
- 2 cups blackberries
- 1/4 cup lime juice
Thyme Simple Syrup
- 1/8 cup watermelon juice reserved
- 1/8 cup pure maple syrup
- 1/4 c fresh thyme sprigs
Directions for Thyme Simple Syrup
1. Bring watermelon juice, maple syrup and fresh thyme springs to a simmer over medium high heat. Simmer 10 minutes.
2. Stir ocassionally while simmering to release the flavor in the thyme sprigs.
3. Then let syrup come to room tempature and remove the thyme. Squeeze any of the syrup out before discarding thyme sprigs.
Directions for Salad
1. In a large bowl combine the watermelon cubes, sliced strawberries, and blackberries.
2. In a small bowl combine 1/4 cup of lime juice and the thyme simple syrup and stir.
3. Pour the Syrup mixture over the fresh fruit and gently stir to incorporate.
Notes
Do not over stir the fruit, it will cause the berries to mush and break.
