Ingredients
  • 1 Cup Dry Quinoa
  • 2 Cups of Fresh Parsley
  • 1/4 Cup Fresh Mint
  • 1 Cup Diced Roma Tomatoes
  • 1 Cup of English Cucumber Chopped with skin on 
  • 1/4 Cup of Chopped Celery
Zesty Dressing Ingredients
  • 1/8 Cup Extra Virgin Olive Oil
  • 1/2 tsp Onion Powder
  • 7 Tablespoons of Lemon Juice
  • Pepper to Taste
  • 1/2 tsp Sea Salt
Directions 
1. Rinse quinoa over a metal strainer.  Add quinoa to an Instant Pot with 1 1/2 cups of water.  Set the Instant pot timer manually for 4 minutes with manual release.
2. Cool quinoa to room temperature while chopping the cucumber, tomatoes, and celery.  Finely chop parsley and mint.
3. In a glass bowl combine quinoa, veggies and herbs.
4. In a small bowl make the zesty lemon dressing.  Combine onion powder, olive oil, lemon juice, sea salt and pepper.
5. Stir all ingredients together to incorporate dressing. 
6. Serve at room temperature or cold.
7. Consider serving this dish with black bean hummus.
