Black Bean Banana Brownies
These Black Bean Brownies are a chocolate lovers dream! Don't worry about tasting black beans you will never know they are there. This easy recipe is one of my favorites and soon to be yours. Go ahead and indulge in this delicious dairy free, gluten free, grain free and without refined sugar brownies, you know you want to.
Ingredients
- 1/2 Cup Very Ripe Banana (mashed with 1-2 TBL of water)
- 15 oz can of Black Beans; rinsed and drained
- 3 TBL Extra Virgin Olive Oil
- 1 1/2 tsp Baking Powder
- 2 TBL Local Raw Honey
- 1/4 tsp Salt
- 3/4 C Raw Cacao Powder or Cocoa Powder
- 2 Eggs
Directions
- Preheat oven at 350'
- Line 8 x 8 baking pan with parchment paper. This makes clean-up a breeze.
- Combine all of the ingredients in a food processor except for the egg.
- Blend until smooth then add egg and blend a few seconds to incorporate.
- A smooth batter ensures your friends never know your secret ingredient.
- Pour batter onto a parchment lined pan
- Bake 20-25 Minutes
- Check with a toothpick, when the toothpick comes out clean it is done.
- Let cool completely before cutting. These are worth the wait.
- Enjoy!
- Store in the refrigerator.
Optional adds
- 1/4 C Enjoy Life Chocolate Chips *contain cane sugar
- 1/4 C Sunflower Kernels
- Top with sprinkle of Sea Salt
- 1/4 Cup of Chopped Salted Almonds
Why Raw Cacao Powder over Cocoa Powder?
Organic Raw Cacao powder is unrefined, "cold-ground" to preserve the enzymes and very rich in antioxidants. This powerful superfood contains hundreds of compounds that include protein, fiber, zinc, iron etc.
Cocoa Powder on the other hand is the processed product of Cacao that is refined and looses many of the nutritional benefits once heated.
