Apple Sourdough Muffin recipe
Ingredients
  • 2 Cups Chopped Apples
  • 1 Mashed Ripe Banana
  • 1/2 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Gluten-Free Sourdough Discard
  • 1/4 Cup Extra Virgin Olive Oil
  • 1/4 Cup Unsweetened Applesauce
  • 1/2 Cup Oat Milk or Make Your Own 
  • 2 Eggs or Bob's Red Mill Egg Replacer
  • 1 1/2 Tablespoon Homemade Vanilla Extract
  • 2 Tablespoons Rubbed Sage
  • 3/4 tsp Cinnamon
  • 2 1/4 Cups Gluten-Free Flour
  • 1 3/4 tsp Baking Soda
  • Optional Pecans
Directions 
1. Preheat oven to 350*
2. In a mixing bowl whisk together; sugars, olive oil, applesauce,  sourdough, milk, eggs, banana, and vanilla.
3. Then stir in apples, cinnamon, sage, gluten-free flour, and baking soda.
4. Pour batter into silicone muffin pan or place paper liners in muffin pan.
5. Top with pecans if desired.  Bake for 20 minutes or until the toothpick comes out clean.
6. Place muffins on the cooling rack until completely cooled.
7. Store in an airtight container for 3 days on the counter or freeze for 2 months.
