How did Pumpkin Cloud cookies get their name?

Introducing the Pumpkin Cloud – a heavenly treat that will transport your taste buds to cloud nine! These light and fluffy pumpkin cookies are simply irresistible. Inspired by the delightful sentiments of my boys' soccer team, who proclaimed them to be as soft and airy as a cloud, it only made sense to name them appropriately.

Why should you make pumpkin cloud cookies?
Unique Texture- These cookies have a pillowy texture unlike any other which makes them irresistible.

ingredients needed

Pumpkin- Organic Solid pumpkin (not the pumpkin pie mix that has the spices)
Gluten-Free Sourdough Discard- This recipe is a great way to use that extra discard you have on hand.  
Gluten-Free Flour Blend- I love to make my own 1:1 GF blend because it saves me money and works well with almost any wheat recipe as a substitute. The recipe coming soon!
Dairy-Free Butter- I used Country Crock Plant Butter with Avocado oil.  Regular butter can be substituted.
Farm Fresh Egg- Whenever possible I love to purchase local eggs
Homemade Vanilla-  I make my vanilla with Potato Vodka and vanilla beans but you can use store-bought if you don't have it on hand.

Ingredients 
  • 1/2 Cup Extra Virgin Olive Oil
  • 8 Drops Pumpkin Spice Vitality Blend (See note below for blend recipe) 
  • 1 Cup of Sugar in the Raw
  • 1 tsp Vanilla
  • 1 Cup Organic Canned Pumpkin no added spices
  • 1/2 Cup Soft Dairy Free Butter
  • 100 Grams of Gluten-Free Sourdough Discard-room temperature
  • 1 Large Egg or Bob's Red Mill Egg Replacer
  • 2 Cups Gluten Free Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • Optional 1 Cup of Enjoy Life Chocolate Chip Minis

Directions 
1.  Preheat oven to 350'.
2. Line the baking sheet with parchment paper or Silplat mat.
3. In a large bowl stir together olive oil and Pumpkin Spice Vitality Oil Blend.  This will ensure that the flavors burst evenly throughout your cookies.
3.  Add sugar, vanilla, pumpkin, dairy-free butter, sourdough discard, and egg and beat well.
4. Add gluten-free flour, baking soda, and baking powder and mix until well incorporated.
5. Stir in chocolate chips if you are using them now.
6. Then Scoop 1 tablespoon of cookie dough onto a parchment-lined baking sheet.
7.  Bake cookies 9 minutes and then place on a cooling rack.
9. Store cookies in an airtight container using parchment paper to separate the layers and store on the counter 2-3 days.
10.  For longer storage place cookies on a baking sheet in a single layer.  Put the sheet of cookies into the freezer for 45 minutes and then place cookies in a zip-loc bag and store in the freezer.  These cookies freeze well.

Notes
  • To make the Pumpkin Spice Vitality Blend; combine 12 drops of Cinnamon, 12 drops of Ginger, 12 drops of Nutmeg, and 8 drops of Clove Vitality oils in a recycled 5 ml oil bottle or small dropper bottle.
  • Tested recipe with Bob's Red Mill Egg Replacer and the recipe comes off beautifully!
