To make these delightful pumpkin sourdough waffles, you'll need a few simple ingredients. First and foremost, you'll need your trusty gluten-free sourdough discard.

Pumpkin Sourdough Waffles Recipe

Ingredients 
  • 1/3 Cup Extra Virgin Olive Oil
  • 7 Drops Pumpkin Spice Vitality Blend 
  • 2 Tablespoons of Brown Sugar
  • 2 Tablespoons of White Sugar
  • 1/2 Cup Pumpkin Puree plain no spices
  • 1 1/2 Cups of Coconut Milk or other milk of choice
  • 1 Egg
  • 1/2 Cup Gluten-Free Sourdough discard
  • 1 1/2 teaspoons of homemade vanilla extract
  • 2 Cups of Gluten-Free Flour Blend
  • 2 teaspoons of gluten-free aluminum-free baking powder or 1/2 tsp baking soda plus 1 1/4 tsp of cream of tarter
Instructions

1. Preheat waffle iron.
2. In a mixing bowl or stand mixer combine extra virgin olive oil and pumpkin spice vitality blend together and stir.
3. Then continue to add sugars, pumpkin, milk, egg, gluten-free sourdough discard, and vanilla.  Mix them well.
4. Next add the gluten-free flour blend and gluten-free baking powder.
5. Mix or beat the batter well to remove most lumps and pour over a hot waffle iron. Be careful not to overfill or it will seep out the edges of the iron.
6. Carefully remove waffles when they are done.
7. Top them any way you like.  My favorite is with cinnamon-infused maple syrup!


Notes

Pumpkin Spice Vitality Blend Recipe
Combine together in a recycled 5 ml oil bottle or small dropper bottle:
12 drops of Cinnamon Vitality
12 drops of Ginger Vitality
12 drops of Nutmeg Vitality
8 drops of Clove Vitality

Cinnamon Maple Syrup Recipe
1/2 teaspoon of pure vanilla extract
one drop of cinnamon vitality
3/4 cup of real maple syrup


Pour vanilla extract into a glass jar and drop cinnamon vitality into it. Swirl. Add maple syrup. Stir to incorporate.
